2008 Semillon
GROWN
Sourced from three high quality vineyards located in Pokolbin, Hunter Valley. The Howard Vineyard contains some of the oldest Semillon vines in the district. The Semillon on the clay/loam soil was planted in 1965 and the Semillon on the sandy loam soil was planted in 1992. The Wombat Crossing Vineyard is relatively young only planted in 1997 on sandy/loam soil. The Bimbadgen Estate Semillon vineyard was planted in 1972 on a mix of clay and sandy loam and is also a source for our Signature Semillon with the fruit picked by hand.
PICKED
In what has become a regular pattern the vintage was warm and dry as we continue to experience drought in the Hunter Valley. The fruit did ripen consistently and we were able to decide when to pick based on the taste of the grapes. The fruit was machine harvested at night in January (Howard: 26/01/2007, Wombat: 24/01/2007, Bimbadgen Estate: 25 and 28/01/2007).
MADE
After arrival at the Winery, th fruit was chilled, gently crushed and pressed to retain the delicate fruit aromatics. The cold settled, clarified juice was inoculated with neutral and aromatic wine yeasts. Fermentation was carried out in stainless steel tanks at 15°C for two weeks. The wine was matured in stainless steel. Semillon is truly a wine made in the vineyard and our job as winemakers is to intervene as little as possible and allow the vineyards to speak for themselves.
