The Semillon grapes for this wine were sourced from three high quality wines with the Hunter Valley, and some of the oldest Semillon Vines in the district. Bimbadgen’s McDonalds Road and Palmers Lane vineyards were planted in 1972, with the Howard Somerset vines dating as far back as 1965. Sauvignon Blanc grapes were sourced from the Kywarra Vineyard in the Orange region of NSW.
To preserve and enhance fruit characters, all of the wines were fermented in stainless steel using aromatic yeasts at cool temperatures. All these wines were left in contact with the yeast lees, until just prior to bottling, to increase palate structure and complexity.
