Grown at Bimbadgen’s Myall Road vineyard, near Griffith, New South Wales. The vineyard comprises 100 acres managed to produce a moderate yield. The vineyard was planted using the most up to date laser levelling techniques and trellising design ensuring high quality yields suitable for premium dessert wines.
After crushing and overnight skin contact, the un-clarified Semillon juice endured a slow fermentation with a number of selected yeast strains. In addition, a number of different fermentation temperatures and oak treatments were also employed. 14% was transferred to quality new French oak for fermentation, transferred back to the main blend and then a further 14% was aged in the same barrels post ferment. Approximately 60% of the wine was kept in contact with the yeast lees until bottling.
